Acadiana (UH-KAY-DEE-ANN-UH)
 Several years ago, on a bit of a whim, my wife Linda, and I
decided to visit the Tabasco factory on Avery Island, in Louisiana. Thus began
a love affair between ourselves and the area known as Acadiana (or Cajun
Country).

a love affair between ourselves and the area known as Acadiana (or Cajun
Country).
We now visit there several times a year, though admittedly
not often enough, and each visit we headquarter ourselves in Abbeville and
spend days exploring the nearby areas.
This area was that settled by the Acadians after their exile
from Canada by the British. While their route from their homes in Nova Scotia,
New Brunswick, and Prince Edward Island to Louisiana was not a direct one,
eventually they did settle here with the help of the Spanish government. 
Since its earliest days, the area has included Native
Americans, Germans, Spanish, French Creoles and people of color. This diverse
mixture gave rise to the Acadians or Cajuns. The unique culture, music, way of
life as well as cooking in the area are why we so enjoy our time there.
Since we can’t visit Cajun Country as often as we like, I
have collected recipes so that we can enjoy the foods at home. In this book I
share with you some of my favorite recipes from the area. Come on in, and let’s
