Red Bean Gumbo

Here’s a special gumbo that doesn’t have a roux base and can be cooked up fairly quickly. It includes red beans to thicken and flavor the dish and from start to serving should take just under an hour.



For the chicken, you can used left over chicken or boil some up. Heck, you can use leftover turkey if you want. Just make sure you get all the bones out.



If you have a family member or friend that has to avoid wheat gluten, here’s the gumbo you need.



This is a fairly mild recipe in terms of spices and heat; you may want to adjust to your tastes.



Try it, you’ll like it!




Here’s what you’ll need to make this:

  • 3 cans of red beans
  • 1 pound of good smoked sausage
  • 1 pound or so of cooked chicken (boned)
  • 1 chopped onion
  • 1 chopped green bell pepper
  • 3 or 4 stalks of chopped celery
  • 2 cups of chicken or vegetable stock
  • 2 tablespoons of Worcestershire sauce
  • 3 to 4 toes of garlic – chopped/minced
  • 4 teaspoons of Cajun seasoning
  •  ½ teaspoon of crushed red pepper flakes
  • Chopped green onions for garnish
  • Salt to taste (start with a teaspoon of Kosher salt)
  • Cooked rice for serving

Here’s an overview of what we’re going to do:

  1. Sauté the onions, pepper, celery and garlic.
  2. Slice up the sausage and add it to the pot.
  3. Puree the beans with their juices
  4. Add in the pureed beans
  5. Add in the chicken or vegetable stock
  6. Add in the spices and Worcestershire sauce
  7. Simmer for a while
  8. Get the leftover chicken ready
  9. Add the chicken 
  10. Simmer for a while
  11. Taste and adjust seasonings
  12. Make some white rice
  13. Serve
 
 

Step 1:

In a large pot or Dutch oven add the oil and turn the heat to about medium.  Add in the chopped onions. Let
these cook for about 5 minutes and then add the chopped bell pepper and celery. Cook for another 5 minutes or so.


Step 2:
While the onions, celery and bell pepper are cooking, slice up the sausage.
  
Step 3:
Now, add  the sausage slices and garlic to the onions, celery and bell pepper. You want to slightly brown the sausage.



Step 4:
Next, open up the three cans of red pinto beans  and then put the beans into a food processor with their juices. You want to puree the beans. 



Now, add the pureed read beans to the pot and stirring well, then bring to a slow simmer.
  
Don't worry! It's going to be great.

Step 5:
Add in the chicken or vegetable stock, stir well and bring back to a simmer. 

Step 6:
Now, add the Worcestershire sauce, Cajun seasoning, red pepper flakes and salt to taste. Cover and simmer for just a few minutes.

Step 7:
Take the chicken pieces and chop or cut them into bite sized chunks and add them to the pot.



Step 8:

Let the gumbo simmer for about 30 minutes while you make a batch of rice.


Step 9:

To plate it up, put a serving of rice on a plate or in a large bowl, add gumbo and top with chopped green onions. This is good eatin’!
